After the coffee has had enough time to harvest we have to pick them off the plant. We do this by looking at the color of the shell of the coffee, if it’s anywhere from a vibrant red to a yellowish tinted red; then, the coffee is ready to be picked from the plant.
Then we take all the coffee beans with their shells and we put them through the “pulpidora” which is a machine that squeezes the coffee bean to get rid of the colorful shell. After all the beans have had their shells removed and washed in clean water, we let them sit. The unshelled coffee beans will ferment for a full day.

Drying coffee in the Sun: air drying of coffee on a sack.

Coffee with seedcoat: the grains of coffee are now dry and are ready to have the seedcoat removed. Seeds affected by Broca are discarded as are other defect coffee beans.
After fermentation the beans have to be dried. This is done naturally by laying them on a sack and putting them in direct sunlight. This takes approximately a week to two weeks.
The next process is to remove the outer protective layer of the coffee bean. This process is done by hand, by chipping off this layer until only the bean is left. When all the coffee beans have had this layer removed the beans go through a quality control. We check all the beans by their hue of color, all the beans that are beige, or beige with little black spots are perfect for producing coffee. Meanwhile all black beans must be thrown out since they are not good enough to make coffee.

Almost read to roast. high quality coffee with and without seedcoats.
The coffee beans that are good for production are then roasted and packaged to be sold in the market. The beans can also be roasted and then grounded into dust to make it easier for the customer to make their own coffee.
